I've done some testing, and I can recreate the same behaviour you're seeing. I'm sorry for the trouble here. It looks like that CVV field is coded as a 'password' field, which is telling 1Password to fill the account password, rather than a CVV number.
I've gone ahead and raised an issue for our development team to look into this, and assess a possible fix in a future update. In the meantime, the drag and drop method you're using would be the best workaround. I'm sorry for the extra steps here.
