1P COPY button no longer puts the capture in Paste.app
Up until recently, I could click "Copy" in 1P, (i.e., User name/password/URL etc,.) and the copied User name would be available in the Paste app. Now, the copied user name does NOT show up in Paste,...

If you're able to copy and paste data from 1Password into other apps and the problem only occurs with Paste (which appears to be a third-party clipboard app) then it sounds like Paste is doing something different that would need to be investigated by the developer of Paste. Being able to paste into emails means that 1Password is correctly depositing the username/password onto the macOS clipboard.
I've never used Paste myself but I know that some third-party clipboard managers (such as Alfred's Clipboard History) exclude password managers like 1Password due to the sensitive data that those password managers hold. It's possible that Paste is doing, or has started doing, something similar.
I recommend reaching out to Paste's developer so that they can investigate further. 🙂
