I would like to be able to upload a custom credit card icon that is not displayed as a square but rather a rectangle. At present, uploading a custom credit card icon will result it in part of it being cut off to fit a square.

1Password TeamHi @ing, thanks so much for taking the time to write in with your suggestion! I've gone ahead and filed a feature request on your behalf, to look into improving the way custom credit card icons are handled to better accommodate rectangular images.
In the meantime, the steps provided by Tertius (thanks for the assist!) would be your best bet for this.

In a painting app, create a square image that is completely transparent. Then paste your rectangular credit card image into the center, so the top and bottom parts remain transparent. Save this square image as png or icon file to keep the transparency info, and it will not being cut off if used as 1Password item icon. The transparency is used to make the square image appear rectangular.
