If you add a date-based field, there seems no way to just leave the field (for future use), but keep it as a blank value. I see only the option to remove the field completely from the record.

Thanks for getting back to me with these additional details.
Creating custom templates or categories is not available at the moment. Creating a default item based off of another item category with added fields and duplicating this item is the best workaround available.
In your example, using the Passport item type would be your best choice there:
But now I have "today's" date filled in, and unless I go back and look carefully, won't know those are bogus dates.
If you're creating an item to be completed later, you can leave any fields blank that you do not currently possess information for instead of entering a placeholder date. When saving the item, only the completed fields will not appear in the item details pane. When reviewing these items, you'll be able to recognize items that need to be completed by the missing fields. Does this help?
