What is the difference between these 2?
I'm trying to figure out the difference between New Item/Login & New Item/Password. They both start out with the Username and Password Fields and I can just click to add a website in the New Password...

In previous versions of 1Password, the Password category only had a password field. In 1Password 8, it gains a username field.
The Password category is used for 1) storage of passwords created by the generator, and 2) for your use for things that are simply password-only types of things, such as a lock or safe combination, or encryption key for a disk. There is no web-login URL associated with such things. 1Password 8's addition of the username field to a Password category makes sense for other types of things such as a software product which requires a username and a password, but has no web login, so there is no associated URL.
1Password 8 will auto-upgrade a Password entry to a Login once a URL is added. Previously, there was a Convert to Login button, but that is now superfluous with the new add website button in the entry. This behavior is more straightforward then the older Convert to Login.
So, use the Password category for anything that requires a username and/or password, but not a URL. Use Login otherwise.
