Have you considered using a Secure Note item? We have a blog that explores the versatility of this type of item here: Making the most of Secure Notes
You can add any custom field to a Secure Note. I look forward to hearing from you.

Hi Dave,
Secure Notes are indeed where I ended up. I'm storing things like access-keys, certificate data, and secrets for reading out via the CLI.
Secure Notes seem to have everything I need once I got over the mental hurdle of using a "note" for something that isn't a note - I admit I ignored them entirely at the start because I assumed (incorrectly) that they would just have a big text field in them.
So, I'm afraid to say, mostly user error here.
