I'm new to using a Password Manager so I may ask some very basic questions. My first question is: can I change my password to a randomly generated one on websites and/or apps through 1Password or do ...

Basic questions are our favorite, so ask away!

To change the passwords for websites or apps, you'll still need to go to that website or app and go through their process to update the password. It would be amazing if it could be done through 1Password, but there are just too many websites and apps out there for us to be able to integrate with all of them for updating passwords.
