Where can I find previously used usernames or passwords?

You're welcome! And you're right – on Android, you can tap the Password field once, then tap "View password history", like this:

Nothing happens when I tap and hold on Android but it works as described on my iPad.

For previously-used passwords, you can tap and hold on the Password field and tap "View password history". For any other part of the item, just as in 1Password 7, you can find and restore previous versions of the item from 1Password.com:
