While editing, copy is disabled
I keep trying to move text from one field to another, but just keep pasting in whatever was in the buffer prior to entering edit mode.

Sorry for the troubles you have been experiencing. The most recent beta includes improvements related to copying information from item fields that should help here. Use 1Password beta releases.
Regarding your comments about searching in the 1Password app, this guide should help and explains that Find items (Ctrl + Alt + F) can be used to find an item in the current list. For a look at all 1Password keyboard shortcuts, you can take a look at that guide.
