Thanks for your message and sorry for the troubles with the Windows Hello setting each day after it was previously disabled.
Since it sounds like you are disabling this setting per the Windows Hello guide below, it might be an issue with your device restoring the 1Password for Windows setting back. Could you let us know more about the device you are using? Is this a personal device or a managed device?
Is this only happening with the Windows Hello setting? Could you let us know if you make adjustments to other settings in 1Password for Windows such as the auto-lock time, do they persist the next day?

Could you also follow the steps below and let us know if you see any improved behaviour?
1. Completely exit 1Password by right-clicking the 1Password icon in the system tray > Quit.
2. Open Start, type %LOCALAPPDATA%\1password\settings
to search, then press enter.
3. Rename the settings.json
file to settings-old.json
.
4. Relaunch 1Password for Windows and disable Windows Hello as needed.
Does this setting, restore itself the next day?
