Asterisks not rendering in "notes" field of item

As MrC has mentioned it is because your notes are being formatted with Markdown.

If you would prefer to turn off Markdown formatting, here's how:
- Open your 1Password app, then choose 1Password > Settings.
- Turn off “Format secure notes using Markdown”.
