Changing Passwords
I'm new to using a Password Manager so I may ask some very basic questions. My first question is: can I change my password to a randomly generated one on websites and/or apps through 1Password or do I have to do this on each individual Site?

You may, and did.
You have to go through the password change process on each website. While automating this process seems possible, the enormous variation and constant evolution of password change processes makes this this impractical.
If you have the website in each Item set to a login page where one exists, the process of opening a tab for a website and automatically logging in can be a one-click action in either the desktop client or browser extension. From there you need to find the password change process, but once you do, 1Password can usually autofill the old and new and confirm new passwords using your preferred setting for password length and complexity, enabling you to change the password and update the Item in a few clicks.
While there, you should take the opportunity to set up passkeys and/or one-time passwords.You will find that almost all the effort is dealing with the broken, poor, and undocumented limitations of the websites. Even so, it is usually possible to handle of tens of websites in a few minutes.
Test your ability to log in with your new credentials using a Private or Incognito session before you log out of each website.
PS. That's not a feature request.

Basic questions are our favorite, so ask away!
To change the passwords for websites or apps, you'll still need to go to that website or app and go through their process to update the password. It would be amazing if it could be done through 1Password, but there are just too many websites and apps out there for us to be able to integrate with all of them for updating passwords.
