I have solved the mystery. (I think!) Markdown on Windows 11 desktop is only enabled in the first white field of a secure note. "The text here says: add any notes about this item here." I've filled it green.
For additional notes which contain filters such as text, URL etc.; these do not support markdown. I've shown it with a green arrow. I'm happy now.
Should there be more nuance or information. I'm all ears.

I experimented per AJCxZ0​ suggestions and ended up with no functionality. This is curious because the way I discovered words in Notes COULD be bold was by accident. Therefore, I knew I had to find a way to repeat it.
Asterisk asterisk phone number asterisk, asterisk just showed everything as is. I'm not putting in the sign because here, it works GREAT!
The point is: for those of us who want just a little ability to make certain items stand out from a lot of text, it would be very helpful. It took me about a year to be convinced to use 1Password, and another year to scratch the surface of the functions. Using it as a repository for log ins, notes has made a significant improvement in my digital life. Now I can't imagine being without it.
