It isn't possible to change the category of an item after it's created. For items that you're going to fill into a website or app, like an email account, the Login category would be your best bet. 1Password in your browser only fills these categories: Logins, Identities, Passwords, Credit Cards and SSH Keys. The Email Account category is great for email accounts that don't have a web interface, and are only accessed through an email client. If you access this email account using a standard username and password however, a Login item for it would be best.
