Is there a way to add a password to the Show previously used password list?

It sounds like you're referring the Show previously used passwords button in a 1Password item. Once an item is created in 1Password and when the password is changed this button will appear and display the previously used passwords.
When an item is imported from another password manager, only new password changes will be stored. If you'd like to record previously used passwords from a time before the item was imported into 1Password, as you suggested, using custom fields is the best way forward.
