Thanks for the question! In general, when you copy data to the clipboard you run an increased risk that this data will be intercepted since the clipboard is accessible to any app on your device. It's one reason why 1Password offers so many different filling options on various platforms (including browser extensions, support for native filling on iOS, and Universal Autofill on the Mac) to help you fill information rather than having to copy and paste information.
Data transmitted between devices by Apple's Universal Clipboard feature is encrypted by Apple. However, Universal Clipboard does technically copy your password from 1Password and send it over a network connection to another device without 1Password's encryption and security so 1Password leaves the feature disabled by default for the apps.
