Thanks for the question! 1Password will try to respect the date formatting preferences set on each of the individual browsers and devices that you and your family use. There isn't a way for a family organizer to set the date format for every family member.

Are you looking at the passport information in the 1Password for Windows desktop app? If you are then can you post a picture of your current language and region settings in Windows: Start menu > Settings  > Time & Language > Language & Region.
